Gobi Manchurian/Cauliflower Manchurian

  • Gobi Manchurian is a mouth watering Indochinese appetiser..........which is a fav.appetiser from children to grownup........


    Ingredients:
    1cauliflower (medium sized, cut to bite-size florets), oil – for deep frying.

  • Batter:
    5tbsp.maida/all-purpose flour, 3tbsp.corn starch,1/4tsp.red chilli powder, 1/4cup water mix all these ingredients and make a smooth and soft batter.


  • Frying Cauliflower florets:
    Coat the cauliflower pieces well with batter and deep fry until cauliflower turns medium dark brown in color and keep them aside.

  • sauce:
    1tsp.oil, 2tbsp.spring onion/green onion(only the bottom white onion), 2finely chopped and deseeded green chilies, salt to taste, 3cloves garlic(finely chopped), 3tbsp.ketchup, 2tbsp.red chili sauce, 2tbsp. soy sauce, 1/4tsp.brown sugar, 1/2tsp.white vinegar(optional), 5tbsp.water, 3tbsp.corn starch, 4tbsp.spring onions(green onions, finely cut)for garnishing.

  • Method:
    Heat oil in a pan, once it is hot add green onions(only chopped white part of the green onions), and fry for on a min., because they should not lose their crunch, then add green chillies and garlic and fry until the garlic turn light brown color. Now add ketchup, red chili sauce, salt, brown sugar and cook until oil starts to separate from mixture, then add soy sauce and vinegar(if using) and mix well. Mix 3tbsp.corn starch with 5tbsp.water and add it to the pan, cook for 2 min., until sauce starts to thicken, then add the fried cauliflower florets to the sauce and toss well to coat cauliflower completely. Mix in the green onions(green parts) and serve it immediately.....

Cabbage Rolls

Few days back,our friends invited us for tea, we had a great time over there......a cup of hot tea with friends on a snowy day.....what's more warm then this?......she served us steamy cabbage rolls which were sooo tasty, simply looked like dumplings...I have fallen in love with these for the first bite itself......These are simple eats with delicious taste......I have tried them yesterday.....they are simple to make and healthy to eat...............

Cabbage Wrap: Rinse the cabbage,Pull off 8-10 large unbroken leaves and in a large pan, bring water to boil, add the cabbage leaves and salt and simmer it for 4min. Remove the cabbage and let it drain,so now the leaves are soft to roll.

Stuffing:

Ingredients:1boiled potato(cut into small pieces),1/4cup onions(finely chopped), 2tsp.chopped garlic, 1/4cup capsicum(finely chopped),1/4cup corn,1/4cup carrot(finely chopped),1tsp.pepper/finely chopped green chillies,salt to taste.

In a skillet, saute the onions and garlic in oil, until the onions are lightly brown,now add the chopped capsicum,carrot,corn, boiled potato,pepper and salt, mix well and remove it from the heat once the vegetables are soft.(if preferable, you can even add little garam masala to the stuffing) Place 2 tablespoons of the stuffing in the center of the cabbage leaves and, roll the whole leaf tightly, as you would do a small bundle.....complete filling all the leaves and then place them in the steaming basket and steam them for about 10min. or until the leaves turn into pale white color.....Carefully remove the rolls and place them on the serving plate and top them with chilli garlic sauce......Serve them hot......

Noodles

Ingredients

1 pack of Chinese rice noodles/haka noodles, 1/2 cup strips of carrot, 1/2 cup cabbage (shredded), 3 cloves of garlic minced, 1/2 cup green pepper strips, 1/2 cup scallions, 2tsp. chili garlic sauce, 2tsp. tomato ketchup, 1 tsp of soy sauce,a pinch of ajinomoto(optional), 2tsp. cornflour, salt to taste. 3tsp. oil

Boil the noodles as per the instructions on the pack.In a wok add oil, once its hot add minced garlic ,wait until it turns golden brown, then add all the vegetables and half of scallions and ajinomoto,once the vegetables are 3/4 done(don't fry them until soft )add in all the sauces, salt,pepper and cornflour allow it to boil for 2-3 min. then toss in pre boiled noodles and cover with lid, keep on the low flame until noodles incorporate the flavor,now add the remaining scallions and serve them hot.................

Spring Rolls

Vegetables

Carrots - 2 (cut into strips),

Cabbage - 1/4,(shredded)

Green Pepper-1/4th(diced into very small cubes),

Spring roll pastry- 18 sheets(I used TYJ brand bought from Asian store)

Salt to taste,

1/4tsp. black pepper powder,

Mix all the vegetables with salt and pepper powder and place the mixture onto one corner of the spring rolls and roll halfway.Now brush the edges with the water and fold the edges and continue rolling the spring roll to enclose completely.
Finally deep fry the spring rolls in hot oil.Let them drain on a paper towel and then transfer them to a container.
Serve with spicy honey chili sauce.

Fried Rice

This is simple and delicious fried rice recipe that I have been cooking for a long time........

Ingredients:
1 cup rice,
1/4tsp.garlic(finely chopped),
1cup chopped celery,
1/2 cup chopped carrot(length wise),
1/4 cup chopped cabbage(length wise),
1 cup spring onions(finely chopped),
1/4 cup green bell peppers(optional).
2tsp. soy sauce,
4tbsp. chilli garlic sauce,
2tsp. oil,
salt to taste.
1/4tsp.black pepper powder.


Cook the rice and keep it aside. In a pan add oil, once it is hot add garlic,1/2cup spring onions, celery and all the chopped vegetables and fry them on high flame until the veggies are half done(do not fry until soft) then add soy sauce, chilli garlic sauce,salt and pepper and now allow the vegetables to boil in the sauces for about a min. then add the cook rice and toss until it is mixed with the sauces and finally garnish it with remaining 1/2 cup of spring onions and serve it hot with garlic sauce or Manchurian.

Veggie Balls in Sweet & Sour Sauce

This is the simple winter dish.........
this will be a good way to make kids have

veggies in their favorite sauce...................
  • 1lb. cabbage
  • 5 normal carrots
  • 1 green bell pepper.
  • 1/4 lb.french beans.
  • 3 cloves of garlic.
  • 3 green chillies.
  • 1''piece of ginger.
  • salt to taste.
  • 3tbs.of bread crumbs.
  • 1tsp.of corn starch.
  • oil for deep frying.

  • Put all vegetables along chillies,ginger and garlic in the food processor and shred them into small pieces.
  • Squeeze out all the excess water from the vegetables,(must squeeze really hard)then add 3tbs.bread crumbs or 1 slice of bread without sides,1tsp.corn starch and, salt and make the mixture into a good consistency that balls are formed out of them.(don't add too much of corn starch because it makes balls hard and chewy)
  • Then deep fry them in oil on a medium high flame and remove from the flame once they are light brown,keep them on a paper towel to drain the excess oil.
  • For gravy:
  • 1tsp of oil.
  • 3tbs. tomato ketchup.
  • 1tsp. red or green chilli sauce.
  • 2tsp.mild soy sauce.
  • 2tsp. of corn starch.
  • 3cloves of garlic finely chopped.
  • 1small bunch of spring onions chopped.

  • In a pan pan heat 1tsp of oil,once it it hot add half of chopped spring onions,then add tomato ketchup,chilli sauce,salt ,soy sauce and just heat them for few min. and then add 2tsp.corn starch and 2cups of water and boil for 4 minutes once the sauce is little thick then add the fried veggie balls and chopped garlic and remaining spring onions and toss them well and remove from the fire and serve them hot. If you have to serve later just add the balls before serving.This will go good with fried rice or noodles.........
