Egg Pot/ Egg Cutlet

Some of our friends were dropping by in the evening.... so I was planning to make some thing good and creative with eggs as our friends are so...fond of eggs, I have created this dish just like that and it turned out so good.....every one liked it a lot....simply it's super hit......

Ingredients:
6 eggs(boiled and peeled), 2tsp. red chilli and garlic paste or we can also use sweet and hot maggie sauce, 2tsp. coriander chutney(i used the store brought one), 2 medium sized potatoes(boiled and mashed ), salt to taste, 1/4tsp.red chilli powder, 1/4tsp. garam masala, 2tsp corn starch, 1/2cup bread crumbs, oil for deep frying.
Method:
Slit the eggs and stuff the chutnies in to the egg as shown in the picture and keep them aside. In a small bowl add cornstarch and little water and make it into a thin paste and keep it aside. Mash the boiled potatoes with no lumps and add salt, redchilli powder, garam masala and keep it aside. Now take the egg and cover it with mashed potato and dip it in the corn starch mixture and roll them in the bread crumbs and keep them aside. Now heat the oil in a pan for deep frying.....once it is hot add these eggs 2 at a time and fry on medium high heat until they are golden brown in color.........serve them with ketchup or sweet and hot sauce.

Kodi guddu Pulusu/Egg in tamaind sauce

Egg Pulusu is one of my favourite among egg dishes that I know. Since my daughter aslo started having egg regularly, we started buying organic eggs.....which is healthier and even tasted better than the normal eggs(might be a feeling......he....he). This recipe is very simple and tasty....... One can bet on this recipe, because it came form the kitchen of a great cook ( my Mom).....

Ingredients:

6 eggs, tamarind/Chinthapandu equal to 2 lemons ( For more gravy..you need to soak more tamarind), 2no.medium sized tomatoes(diced), 1no.big onion(chopped finely), 3no.green chillies(slitted length wide), 1tsp. cumin seeds, 1/2tsp.mustard seeds, 2springs curry leaves, 1tsp. turmeric powder, 2tsp.red chilli powder, 3tsp.oil, 3tsp. coriander leaves for garnishing, salt to taste.


Boil eggs,remove shell, make cuts in between the eggs with knife (as you can see in the picture above) and keep aside.Wash, soak/chinthapandu in 1cup of warm water. In a deep pan heat oil, once it is hot, add mustard seeds, cumin seeds, green chillies, curry leaves and fry for 1 min. Now add onions and fry on medium heat till they are pink and translucent. For this curry it is necessary that onions should be fried well i.e.,soft and tender(because it makes the gravy) now, add salt, turmeric powder, tomatoes(diced) and cover the sauce pan until the tomatoes are soft, Meanwhile, squeeze juice out of tamarind in the same container, that is soaked. Remove tamarind pulp and keep the juice aside. now add the juice, 1/2 cup of water and eggs to the tomato curry, and allow it to boil for about 10min. or until the curry is thick enough, now we can the color of the eggs change form white to light brown, as the tamarind juice gets into the egg trough the slits and make the egg taste yummy... adjust the spices at this point because the curry is reduced in the quantity...........now garnish it with coriander leaves......serve it with hot steamed rice....

Kodi Guddu Porutu, Egg Porutu, Egg Burji

Who don't know egg Porutu/burji?.....I like to call it Indian style of Scrambled Egg. It is the easiest dish that anybody can make......I have been doing this recipe for years, from my collage days.......I think it's the most simple and easy dish ever ... how ever we do it, turns out tasty.......

Ingredients:

4Eggs, 1 big onion,2no.green chillies/ 1tsp. red chilli powder(adjust as per spice level), salt to taste, 3tsp. oil, 1/4 tsp. turmeric powder.


Cut the onions, green chilies into small pieces, in a pan heat the oil , once it is hot add the onions and green chillies and fry them until the onions are translucent, then add salt, turmeric powder, red chilli powder and fry for about a min. then add the beaten eggs to the sauteed onions and cook them on medium heat until done(In between stir well with spatula, so that the eggs g in the pan are roughly scrambled)......serve it with roti or rice..........

Triple Veggie Omelet

This is a special break fast on a Sunday morning............why do you think so????so surprising to me.......this mouth watering omelet is made by my hubby...........I was soooo happy to see breakfast to be on my plate by the time I got up...........what else a women want on a women's day other than this perfect gift form her hubby............

It was so yummy...yummy ................so I'm sharing this recipe with you all....................

Ingredients:

2 tablespoons butter
1 small onion, chopped
1 green bell pepper, chopped
4 eggs
2 tablespoons milk
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
4tsp.shredded Swiss cheese

Melt one tablespoon butter in a medium pan over medium heat, add onion, bell pepper and little salt, cook for 4 to 5 minutes stirring occasionally until vegetables are tender, transfer them to another bowl. Beat the eggs with the milk, 1/2 teaspoon salt and pepper. Melt the remaining 1tbs. butter over medium heat. When the butter is hot add the egg mixture and cook the egg for 4 min. or the center of the omelet starts to look dry. Sprinkle the cheese over the omelet and spread the vegetable mixture on the center of the omelet. Using a spatula gently fold the omelet over the vegetables. Let the omelet cook for another two minutes or until the cheese melts. Slide the omelet out of the pan and onto a plate. Cut in half and serve.

Kodi Guddu palu posina Kura/ Egg Curry with Milk

Me and My Sissy arevery fond of this egg curry. There was a time when Mom used to make this for us everyday. Habit changes and somehow in the line, I found we stopped making it. At times I try making it, else normally never. I have been planning for so long to make this curry,that I almost gave up on that. But this time when I went for vacation, my mom made this curry for us,My j :-) and daughter became big fans for this curry..............hmmmmmmmmmmm..

So,tastes and habits are back now..........so I cook it so often.....at least twice in a week........

Ingredients:

3big onions(chopped), 4Eggs, 5cups milk,1/4tsp. turmeric, 1tsp. red chilli powder, salt to taste and 3tsp.oil.

Method:

In a flat pan add oil, once it is hot add onions and sautee them for 5 min.then add salt,red chilli powder and turmeric, fry for one more minute and then add milk and allow it to boil, once it starts rolling boiling, crack the eggs and drop one at a time with little gap(don't put them all together)and cook on a medium high flame until the gravy is tick(appx.20min.) and flip the eggs..............The eggs look like cutlets.......serve them hot with roti or with rasam rice.

Kodi guddu Munakkaya Masala(Egg in Tomato and Milk)

There is a lot to tell about this curry....................................this is delicious and quick fix.You need not take myword for this..........if you try it out, it will sure become one of your favorites too........





Ingredients:


4 Eggs, 2big onions(chopped), 2big tomatoes(diced), 2 cups of Milk, Salt to taste, 1tsp. Red chilli powder, 1/4tsp. turmeric.


Seasoning:


2tsp. oil, 1/2 tsp.Mustard seeds, 1/2 tsp.Jeera, 1 Spring of curry leaves.


Method:


Heat oil in a pan.once it is hot add all the seasoning ingredients,when they start spluttering add the chopped onions, once they are translucent add the tomatoes and fry them till the tomatoes are soft, now add drum sticks, and boiled and peeled eggs(slit them a little so that the eggs absorb the gravy and taste better),salt,red chilli powder, turmeric and add 2cups of milk and cook till the drum sticks are soft and tender.......this will go good with rice.

Mom's Omlate

This is my Mom's Recipe........it's .......sooooooooooyammy...yammy........

2no.eggs.
1 onion finely chopped.
3 green chillies finely chopped.
2tsp.oil
salt to taste.
a pinch of turmeric.


  • In a pan add oil,once it's hot add chopped onion,green chillies,salt and turmeric and fry them until the onions are translucent,then add fried onions,chillies and eggs in a bowl and whisk them for 2 min. then heat the pan and add 1tsp. oil and pour the whisked eggs, and fry it well on both the sides.............
