Shortbread Cookies

These are the best melt in mouth butter blasting shortbread cookies that I have made . This recipe is so simple, no way that anyone could go wrong.........................sure a treat to bake.

Ingredients:

  • 2butter sticks(1cup) at room temperature
  • 1 cup all-purpose flour
  • 1/2 cup icing sugar
  • 1/2 cup cornstarch
  • 1/2tsp.vanilla extract

Method:

  • Sift four, cornstarch, sugar together and keep it aside. Cream butter, vanilla until light and fluffy, then add the sifted dry ingredients to butter in few batches; blend smooth with mixer until they are mixed well. Refrigerate dough 15 minutes. Preheat oven to 300F. Make 1'' balls, place then on ungreased cookie sheet; flatten lightly with fork. Chill the cookies for 5-10min., then bake for about 20-25min., or until slightly brown.

Turned One!!!!!!!!!!!!!!!

I feel......it's only yesterday that I came across thousands of food blogs that inspired me to have one for me. I can't believe that this space turned one on 26th Dec., and I must say it has been an amazing journey so far learning, experimenting new recipes and top of all I made many friends around.

I would like to thank each one of you for reading my blog, leaving lovely, suggestive and appreciative comments.

Coconut Macaroons

These are the easy making and fast vanishing sweet treats, that I have made in recent days.......These are on my to do list for a long time. Due to holidays I was quite busy so could not come up with any creative,(time taking) dish for my blogs 1st b'day, but no regrets because these cute little goodies came out so perfect and yummm.........Enjoy these Coconut Macaroons from me for this occasion......................


Ingredients:

  • 2&3/4 cup Shredded Coconut, (I used sweetened coconut)
  • 3/4 cup Sweetened Condensed
  • 1tsp.Vanilla extract
  • Pinch of Salt

  • Method :

    Mix all the ingredients together. Use a cookie scooper or spoon to drop the mixture onto a greased baking sheet. Preheat the oven at 325F and bake for about 15 min or until golden brown. These cuties are ready to munch..............

    Butter Biscuits

    Ingredients:-

    All Purpose Flour (Maida) –

    2,cups Sugar – 3/4th cup,

    Cardamom – 4,

    Butter/Ghee - 1 ¼ cup,melted

    Baking Soda – 1 tsp,

    Method :-

    Grind the Sugar and Cardamom together. In a large bowl, mix the Flour,Sugar and Baking Soda. Heat the butter/ghee in a kadai till it melts and add it to the flour. Mix all the ingredients together ,press hard with hand as the mixture tends to loosen. Do not add water .If required, melt some more ghee and add it to the mixture. Make a tight dough. Keep it aside for 4-5 hrs. Now, you will find the mixture to be a little hard, don’t panic(I remember panicking for the first time), just press it hard with hands and it should be fine. Make small rounds and flatten it little(not too flat,just press a little on the top).The mixture might loosen out in between. If so, use ghee in hands and apply pressure . Preheat the oven at 300F.Place the balls(space it well) in a greased oven proof dish and bake it for 25-30min.Once done store it in a air tight container.


    I have done a lot of experiments with this recipe,but never succeeded, but this time.. I made it.......they are simply delicious and incredibly soft, I fallowed and copied the recipe of my fellow blogger .................Tips from her.......do not bake it as soon as the dough was made (ie., without keeping it for 4-5hrs) the taste will be fine but the balls will flatten completely,they will stick with each other and turn brown in color in no time.I suggest, keep checking in between. These taste good when they are hot or warm.

    Choclate Chip Cookies

    This is the first time I have tried my hand in baking cookies........guess what????? they came out so soft and tasty.....

    • Ingredients:
    • 3/4 cup sugar,
    • 3/4 cup packed brown sugar,
    • 1 cup butter, softened,
    • 2 large eggs,beaten,
    • 1 teaspoon vanilla extract,
    • 2 1/4 cups all-purpose flour1 teaspoon baking soda,
    • 3/4 teaspoon salt,
    • 2 cups semisweet chocolate chips, if desired, 1 cup chopped pecans

    • Preheat oven to 375 degrees. Mix sugar, brown sugar, butter, vanilla and eggs in a large bowl by hand. Stir in flour, baking soda, and salt. The dough will be very stiff. Stir in chocolate chips and pecans if desired. Drop dough by rounded tablespoonfuls 2 inches apart onto un greased cookie sheet. Bake 8 to 10 minutes or until light brown. The centers will be soft. Let cool completely then remove from cookie sheet

    Choclate Chip Scones

    1/2 cup plus 2 tablespoons sugar.
    1 teaspoon baking powder.
    1/2 teaspoon baking soda.
    1/2 teaspoon salt.
    6 tablespoons (3/4 stick) chilled unsalted butter, diced .
    1 teaspoon (packed) grated lemon peel.
    3/4 cup semisweet chocolate chips.
    3/4 cup chilled buttermilk.
    1 large egg yolk.
    1 teaspoon vanilla extract Milk (for glaze)
    Preparation
    Butter and flour baking sheet. Sift 2 cups flour, 1/2 cup sugar, baking powder, baking soda and salt into large bowl. Add butter and lemon peel; rub in with fingertips until butter is reduced to size of rice grains. Mix in chocolate chips. Whisk buttermilk, egg yolk and vanilla in small bowl to blend. Add buttermilk mixture to dry ingredients; mix until dough comes together in moist clumps. Gather dough into ball. Press dough out on lightly floured surface to 8-inch round; cut round into 6 wedges. Transfer wedges to prepared baking sheet, spacing 1 inch apart. Preheat oven to 400°. Brush scones lightly with milk; sprinkle with remaining 2 tablespoons sugar. Bake until scones are crusty on top and tester inserted into center comes out clean, about 20 minutes. Serve warm.
